Standardization, Sensory Evaluation and Physico Chemical Analysis of Grape Seed Powder Incorporated Home Made Noodles

چکیده

As grape seed is the waste material in processing, these generally utilized as cattle feed many countries, while has been shown to contain high amount of antioxidant compounds and a good source polyphenols wide variety proanthocyanidins. For current study, seeds were collected, dried powdered separately incorporated different noodles such tomato, mint beetroot at 10%, 20% 30% levels. Among three varieties, powder was highly accepted. Grape found be rich protein, vitamins like carotene, C Vitamin E minerals iron calcium. The microbial load assessed for accepted homemade it safe level.
